Mediterranean Monday: Chicken Gyros

The Mediterranean Monday Hiatus is over! Today I am bringing to you a recipe for chicken gyros!

I was introducing the Mediterranean Lifestyle to my family of 6, and I wanted do it with something they would find fun and super yummy!

I kept calling the gyros – fajitas for the Greeks! Ha! (Texans relate to anything Mexican food)

Gyros are traditionally made with lamb, but my family is not a huge fan of lamb, so I made them picky eater friendly.

They are also PERFECT for a mediterranean meal because they are great for making in a group. If you know anything about the mediterranean lifestyle (click here to learn more), eating socially is a huge part! Put the toppings in bowls on the table, and you have a fun and easy family dinner!

Keep in mind, you can easily tweak the toppings to make the gyros a different style. Add black beans, corn and guacamole, and you have a southwest gyro. Make it shrimp and add slaw, and you have a pescatarian friendly option. Chickpeas are a great protein source for those who are veggie wanting to try this out!

When I was in college, I always ate at Pita Pit, and it gave me inspiration for many of my gyro creations. Check out there menu if you want to be inspired too!
