Vietnamese Spring Rolls with Crab and Shrimp

When you are in college, you learn about – and are exposed to – a lot of new things. I am from a town of 199 people, so when I moved to the DFW area, I experienced a bit of culture shock.

Of all the new things I tried and loved, Vietnamese Spring Rolls are my favorite! There was a place called Viet Bites in Denton – and let’s just say I was a frequent shopper.

My favorite spring rolls had crab and shrimp in them, and of course, I ate a little too much peanut sauce.

Aside from the freaky rice paper, Vietnamese Spring Rolls looked like something I could easily make at home, so I ventured it out to try to make them at home.

The best thing about spring rolls is you can customize them into anything you want! Here is my favorite recipe to make at home:

Ingredients

10 spring roll rice paper wrappers

1 carrot, julienned

1 cucumber, julienned

Crab meat sticks

1 avocado, sliced

20 medium shrimp, cooked

5 lettuce leaves

Instructions

1. Prepare rice wrappers: Pour warm water into a bowl and dip each wrapper into water for 15-20 seconds, until the wrapper is soft enough. Place the wrapper on a cutting board and pat until slightly dry.

2. Take few pieces of carrots, cucumber, and cabbage and place on top of the rice wrapper.

3. Then place a slice of avocado and sprinkle cilantro on top.

4. Lay 1/2 of a lettuce leaf on top and 1 shrimp on top.

5. Roll everything up tightly, starting by rolling up the bottom of the roll and then roll over the filling. As you roll, make sure the filling is being tightly secured in.
