If you are a single Parks and Recreation fan, you have probably wanted to throw a Galentine’s Day brunch right after that episode.




I know I did. Thanks to Target, I was able to throw an amazing brunch with items from the dollar section – and no, this is not sponsored by Target (I really wish it was though).

THE BAR

Channeling my inner Leslie Knope, I decided to a simple waffle bar. I also made some scones – and of course, it’s not brunch without a little mimosa bar.

The waffles were just from a box mix – so that’s just $2 at your local H-E-B or target! I also grabbed some brownies to cut up for toppings, candy and some fruit.

The little cups were from Target, and the heart-shaped plates were from H-E-B! This was probably the easiest thing I created!



As for the scones, I have been begging for the last two years to get a stone scone pan, and I finally got one this Christmas! There are scone mixes that I love at World Market, so I bought a couple of those, added water, baked – and done!

I made chai tea and white chocolate raspberry scones! I wanted to make chocolate chip, but one of my guests was allergic.

And now for the most important part – the mimosa bar.

The mimosa bar had the two staples, orange juice and champagne. In three other mason jars, I put different juices for mix-ins!

I also put out oranges, blueberries and cherries out to go with the mimosas!

My favorite part was the champagne flukes – they were from H-E-B, and they were heart-shaped!

The bar itself was just an old table covered with a tablecloth from Target with streamers and heart-shaped dollies from Target hanging in the bathroom.

THE TABLE

The table is actually my go-to beer pong table covered with a tablecloth from, yes, Target. Yes, you are sensing a trend here.

I decided to get some fresh roses from H-E-B for only $4, and I bought some simple red paper plates. I had to get some favors for my gals, and these were all from the dollar bin at Target!

THE PHOTO WALL

If you are with your gals, you are probably going to want to take some awesome pictures of how cool of a crew you really are.

I know we did.

We made a super easy wall with dollies and a sign – all from the Target dollar bin.

The actual heart floatie was a gift from HBO when I got the chance to work with a while back – so it was free and cute!
